Default Freeze dried fruits?

Hey everyone, I was in the store today picking up some fresh ginger for my fids when I found the freeze dried fruit. We were thinking about getting them some but we weren't sure that they were safe. My hubby said he thought there was something about the process of freeze drying that makes it not ok. I don't see a problem since it's just fruit super dried out.

Can someone help us out with an answer?
