Red face coconut flour muffins!

You can make this with pulverized eggshells, or without, depending on who all will be eating them!

1 Cup coconut flour
4 eggs
2 cups sliced fruits and veggies
(I used sliced carrot, bell pepper, cucumber, and broccoli stems!)
1/4 finely shredded leafy fruit or veggie. (I used hibiscus!)


Mix really well.
Pour into muffin tin, and bake at 350 for 20 minutes or until top is browned.

I broke mine up into pieces and froze them. Every couple of days the birds and the rabbit gets a piece!

a note about coconut flour, it is very dense. It usually takes 3 eggs per ounce of flour used.

I never saw a wild thing sorry for itself. A small bird will drop frozen dead from a bough without ever having felt sorry for itself.

It tastes pretty good. And the coconut flour is kind of a treat for them. And its a sneaky way to get some veggies in them if they are picky.
