You get your budgies to eat by not giving up and by being persistent in offering the fresh foods to them.
You can try to present the veggies in different ways and to see which one sparks their curiosity the most.
Some budgies like their veggies finely chopped and placed on a bowl, while others prefer them whole and attached onto the cage's bars.
You can also entice your budgies to eat their greens by sprinkling a few seeds onto them.

As for fruit, once your budgies learnt to eat it, due to the high sugar content it's best to only offer occasionally and only a very small portion.

For all the detailed information and tips on how to improve your budgies' diet, Be sure to check the sticky threads at the top of the Diet and Nutrition's main page.

Good luck!

My budgie tried broccoli but shook their head after they tried it. Do they like it or not?

Budgies (and other pet birds) can shake their heads initially when trying a new fresh food, this can also happen if a leafy green is dripping wet and they will shake their head and ruffle their feathers when going for the veggie and drinking a drop of water (or when a drop of water falls on them).
Another time where your budgie can also shake the head is when in a playfully mischievous mood the budgie "attacks" the broccoli (carrot, etc) and in the process flings some pieces all over the cage.

It's all a matter of observing and deciphering the context of the situation. Shaking the head does not have a negative connotation.
