Well I didn't really have to decide in the end my lutino male seems to have taken a liking to my green cinnamon hen so i guess i will stick to that.
If she was not a cinnamon i would have a guess that i would get normal/lutino males and lutino hens but as she is cinnamon i'm really confused on what to expect

I'm neither a breeder nor a mutations expert, but I do know that lutino and green cinnamon are both green series. Green is dominant to blue. Thus, all chicks will be green series unless both cock and hen are split to blue.
If your lutino male is not split for blue all his daughters will be lutino regardless of which hen is is mated to.
The male ckicks will all be split for ino and you can expect greens & grey greens with the opaline grey hen & all greens with either of the other two
You are right that if the lutino is paired with an albino hen all the chicks will be lutino split for blue unless the lutino is split for blue. If he is split for blue you'll get about half each of albino & lutino
