Default Yemista (stuffed tomatoes and peppers)

Hello guys, here I am again I decided to post a thread on how to prepare Yemista! this is a traditional greek dish and some of you would judge it as a difficult one, but it isn't! I make this very often and everybody loves it! How about you?

We'll need:
5 large tomatoes
5 bell peppers
1 onion,finely chopped
2 garlic cloves,finely chopped
½ green bell pepper,finely chopped
½ bunch fresh mint,finely chopped
½ bunch fresh parsley,finely chopped
½ bunch dill,finely chopped
1 tbs oregano
12 tbs rice (1 per vegetable and a little more)
¾ cup water
¾ cup greek extra virgin olive oil
salt and pepper
5 large potatoes,washed,peeled,cut in wedges
(if you can't find fresh herbs, you can use dried ones, but in a smaller amount!)

Preheat the oven at 180 C.
Carefully cut the tops off the tomatoes and peppers. With a spoon, remove the inside of the tomatoes, add them in a food processor bowl and puree. Remove the inside of the peppers and disregard.
In a sauté pan, on a medium heat, add ¼ cup extra virgin olive oil and onion. Sautee until the onion has softened.
Add 2 Chopped Garlic cloves and sauté for another few minutes.
Then add the rice. Sautee for 1 minute.
In the rice mixture, add the green bell pepper, sautee for 1 minute.
Then add ¾ of the tomato puree (add the rest at the end), mint, parsley, dill, salt and pepper. Simmer for 5 minutes and turn off the heat
Fill all the tomatoes and peppers with the mixture and put their tops back on and place them in the baking pan/dish.
In a bowl, add the wedge cut potatoes. Drizzle extra virgin olive oil, oregano, salt and pepper. Rub well using your hands and toss them in the baking dish between the tomatoes and peppers.
Drizzle more extra virgin olive oil, salt, pepper, and oregano all over the top (both the vegetables and potatoes).
Then add the remaining tomato puree, the remaining filling and pour the water on the bottom of the pan.
Bake until they are golden brown on top. Then turn them upside down using 2 spoons and be careful, the feeling must remain inside! Bake them again until they are golden brown on this side too and Yemista are done!

Yummy, this looks lovely Despina, I will certainly give this a go sometime, we have a vegetarian in the house so this will be perfect for her although I'll have to amend it a bit and not use all that olive oil. Still dieting, lost 1.5 stone now

hello! of course you can change the amount of olive oil! This amount generally is for 5 people! thank you, I hope you all enjoy this dish
