Default Some of My Recipes

Just a few of the recipes I do. Unfortunately with some I don't have actual quantities as I just go by feel and taste. So here goes.

Dinner last night Spaghetti Bolognaise. Really easy and tasty.

Crushed or minced Garlic
Finely chopped onion
Beef Mince
Tomato Paste
Herbs, Oregano, Marjoram, Basil, Thyme (normal or lemon) and Rosemary
White Wine
Water
Ground black pepper and salt
oil

Heat oil in a saucepan and add garlic an onion and lightly saute, add mince and brown well. Add tomato paste, wine and water and the herbs, salt and pepper to taste. Bring to boil and turn down and simmer for 20 to 30 minutes until most of the liquid has gone. Serve on Spaghetti with parmesan cheese. Last night I only used 1/4 kg of mince and will get 2 to 3 meals from this quantity. I used dried herbs but if using fresh you need to chop them and use lots more than when using dry.

Sauces. I do nearly all my sauces in the microwave in a glass jug, they take no time at all.

Barbecue Sauce

1/2 finely chopped clove garlic and 1/4 finely chopped onion, small amount of butter and heat for 30 seconds.
3 tablespoons Tomato Sauce (Ketchup for the Americans) for the Australians I only use Fountain Traditional in the glass bottle.
2 tablespoons Worcestershire Sauce
1 tablespoon Lemon Juice
Tabasco Sauce to taste, I like my pretty spicy
Heat for 30 seconds in microwave.

I use this on French Cutlets grilled served on steamed rice and the sauce over the cutlets.

Sweet and Sour Sauce

1/4 cup sugar
1/4 cup white vinegar
1/4 cup water
2 teaspoons cornflour (corn starch)
1 tablespoon tomato sauce

Heat gradually in microwave in 30 second increments stiring in between until sauce thickens and goes clear.

I serve this with Pork Belly Rashers or ribs (not the American style ribs, but the meaty ones with the skin and fat) grilled and served on steamed rice pour the sauce over the pork.

Lemon Sauce (very similar to Sweet and Sour)

1/4 cup sugar
1/4 cup lemon juice
1/4 cup water
2 1/2 level teaspoons cornflour

Heat gradually in microwave in 30 second increments stiring in between until sauce thickens and goes clear.

This one I grill Chicken Wings serve on steamed rice. Pour the sauce over the chicken.

Desperation Dinner. Made this one up when I was on a really tight budget and all that was left in the house the day before payday was an onion, a tomato, some tomato paste, tasty cheese and pasta.

Dice onion and tomato, Put pasta on to boil (I usually use either large shell or large spiral noodles)
Put a little oil in a frypan and saute onion, then add the chopped tomato and cook for a minute or two, add tomato paste and allow to cook for around 5 minutes. Drain pasta and add a small amount of butter and the grated tasty cheese the mix through the onion and tomato mixture and serve.

You pretty much get all the basic food groups in this meal with cheese being the meat substitute, carbs with the pasta and fruit and veges with the tomato and onion. Can also be served as a side with a bbq steak.

Wow, fine recipes for 'people food' you got here, Katie! I definitely will try the BBQ sauce with Tabasco to give it an extra punch! The Sweet and Sour recipe you listed is also similar to Chinese Sweet and Sour Pork (I'm part Chinese), and we also add a little soy sauce to it

Yes Nick it is basically what the Chinese Restaurants used to make over here before they just started buying it in in bulk and heating it through. It is really not the same as it used to be when they made it themselves, now it gets its red colouring from food die and is far too red. I prefer mine. When I get the energy I do the proper fried battered pork for the sweet and sour but using the belly is just much quicker. When I was working long hours I needed to develop some really quick meals that didn't take alot of preparation time, otherwise I was eating at midnight.

Sorry Lyn I forgot.

Filipino Pork BBQ

Use either Leg Pork Chops or Forequarter Pork Chops. I freeze it first and then only partially defrost so it is easier to cut into cubes. Try to get pork that has a good rim of fat under the skin and don't remove the skin. Cut into roughly 2 inch cubes and marinate in Carbonated Lemonade (for the Americans Sprite type Soda Pop) some lemon juice, soy sauce, brown sugar, sliced onion and whole black peppercorns, the mix should still have the fragrance of the lemonade coming through slightly and not smell just like soy. Marinate for at least 4 hours, overnight is better. Put the pork onto bamboo skewers and either bbq on a charcoal grill, hibachi or under the electric griller.

Filipino Adobo either Chicken or Chicken and Pork

I use chicken wings and the same type of pork that I use for the Sweet and Sour. Cut the pork into roughly 1 1/2 inch pieces.

In a saucepan put a little oil and saute garlic either chopped or crushed and sliced onion. Put in the chicken and pork and brown. Add White Vinegar, Soy Sauce and some water and black peppercorns which I break up in a Mortar and Pestle. Bring to the boil then turn down and simmer until cooked. The chicken should be nearly falling off the bone. It depends on how strong you like it as to how much vinegar, soy and water you put in. Serve on Steamed Rice.

Hope those make sense. Everyone in the Phillipines seem to make these dishes differently, this is the way I like them.
