Hi everyone! Today's a school holiday (it's Día de San José, or Father's Day here in Spain) so I wanted to make a homemade lunch. I'm obsessed with getting more pulses into my diet, so I decided to go to hummus. It was so easy to make my own hummus, and it's delicious!
In a food processor, combine:
- 400g rinsed and drained chickpeas
- the juice of 1.5 lemons
- about 4 tbsp extra virgin olive oil (drizzle until the texture is how you like)
- 2 crushed garlic cloves
- a handful of toasted sesame seeds (toast in a dry pan until they begin to pop) - you can substitute for 4tbsp tahini if you like
- 1 tsp sweet paprika
- 1 tsp salt
Add a tiny amount of water at a time until the texture is nice and smooth. Chop a handful of fresh parsley (and save the rest for your friends
) and sprinkle on top. Serve with grainy bread, pita or crisp veggies.
Please do not share this recipe with your budgie friends as it contains raw garlic.
This recipe is very lemony and garlicky, so you can reduce the amount if you don't like those flavors as much. Myself, I love them!
I also made a tomato salad for a side dish with cherry tomatoes, olive oil, a squeeze of lemon, chopped parsley, 1/2 a clove of finely-chopped garlic, and some salt.
I'm so excited that I'll never have to buy the horrible hummus sold by the one supermarket that stocks it!
