Eggs in tomato sauce
Hello guys! I was wondering what I'm having for dinner, I opened the fridge, found tomatoes, feta cheese and eggs. Decided to make this one, easy and quick! I hope you like it!
2 trimmed tomatoes
half a clove of garlic- chopped
a pinch of sugar
Put some olive oil in a frying pan and saute the garlic for a minute. Then put the tomato, mint, oregano, salt, pepper, sugar and 1/4 of a cup water and let it boil for 10 minutes. Most of the water in the sauce will be gone in the end. Like this.
Then take a spoon and make 2 gaps in the sauce. Crack the eggs in the gaps.
Remove from the heat when the egg white is ready. About 5-7 minutes.(Personally I like the egg yolk half-cooked)
Serve with feta cheese and whole grain bread. Enjoy!
