I kind of assembled this out of some leftovers but it came out delicious! If you like cilantro, that is. Cilantro has a very distinctive and strong taste.
Anyway, I had some cooked white rice that I used as the base for the dish. I also had some Cajun flavor chicken sausage that was left over from the night before. So, here it goes:
On a little olive oil, sautee a clove of garlic. Then add chopped cilantro, some cooked peas ( I always have a bag of frozen peas in the freezer) , rice, sausage, a little bit of salt and hot pepper (if desired). Fry a little to blend all the ingredients a little, and enjoy
It smells wonderful, and it also looks and tastes good.
That is a great idea Dee! I love cilantro. The last time I bought some I never used it for soup as intended, and it went bad, so had to throw it away. No biggie as it's so cheap, but now I know what to do next time I need to use it! I eat brown rice (unless it's sushi ). I think I will make some of this, or a very similar version . Can't forget the garlic!
Mm, sounds good to me! Rice is delicious and cilantro rice is even better! I'll bet it'll taste very good with a side of beans, and maybe a fried egg over-medium on top
