I surprised myself yesterday! Made a Coconut Vegetable Curry for dinner - no recipe - just added and adjusted until I liked it. Soooo nice! In fact, my carnivore son wanted it for his dinner too! LOL 
For the curry part, I just used a teaspoon each of cumin, tumeric, ground up some cardarmon seeds in the mortar and pestle and added smoked paprika. Left out the chilli - I do not like it, but if you do, throw some in. After I fried the spices off, I added a handful of shredded coconut and 300ml of pure cream and let the flavour develop on a gentle simmer.
I cooked up some veggies seperately - sweet potato, zucchini, carrot, corn, peas, spinach. After salting some eggplant and drawing out the yukky bitter stuff, I rinsed that off, then cut it into wedges and fried it. Popped it on paper towel to get the oil out. Then combined the lot, with the sauce - and O-M-G! Drool-worthy!
Had it with rice - because you have to have something to mop up the sauce with
