I do! It is such a great looking veggie! Love the purple color, the shape, and the taste:)
I like breaded eggplant; I usually serve it with some nice salad.
How do you make eggplant (if you do)?

The texture, when cooked, is kind of like zucchini, but then again, not quite. It's not as watery, but rather more "spongy".
It's a great vegetable, you should try it

If you like Italian cuisine, eggplant parmesan is yummi!
Basically, you slice up an eggplant and season it, then dip the slices into flower, egg, and then breadcrumbs and fry it.
Then layer it in a pan and pour spaghetti sauce over it and grate some mozzarella. Bake. Yum.

My daughters and I love eggplant cooked just about anyway. Even a eggplant parm hoagie is super.

Fried eggplant slices is delicious. Fried eggplant, baked macroni and cheese and stewed tomatoes.
We never peel the eggplant if we are frying or baking it but you should always do a salt soak for about a hour before cooking.

My favorite eggplant dish is Eggplant Ratatouille.

Yes, pleaaaase!!

Goes without sayin' but for those who don't know how to cook it, you gotta peel it first :p
