Do you like eggplant?

Never had it...what does it compare to taste wise...

I will have to give it a whirl sometime...

I have not cooked it in years but eggplant parmesan is good.

I don't like it,I love it!Here the eggplant is one of the kings of greek cuisine I can post one or two recipes if you want!

I love eggplant parm and sometimes I use it for the noodle in lasagna.

I love it! This post made me laugh because I just went get the stuff to make some eggplant parmesan!

My daughters and I love eggplant cooked just about anyway. Even a eggplant parm hoagie is super.

Fried eggplant slices is delicious. Fried eggplant, baked macroni and cheese and stewed tomatoes.
We never peel the eggplant if we are frying or baking it but you should always do a salt soak for about a hour before cooking.

My favorite eggplant dish is Eggplant Ratatouille.
