Hello guys! I was wondering what I'm having for dinner, I opened the fridge, found tomatoes, feta cheese and eggs. Decided to make this one, easy and quick! I hope you like it!

You'll need:
2 eggs
2 trimmed tomatoes
half a clove of garlic- chopped
a pinch of sugar
mint
oregano
salt
pepper

Put some olive oil in a frying pan and saute the garlic for a minute. Then put the tomato, mint, oregano, salt, pepper, sugar and 1/4 of a cup water and let it boil for 10 minutes. Most of the water in the sauce will be gone in the end. Like this.

Then take a spoon and make 2 gaps in the sauce. Crack the eggs in the gaps.

Remove from the heat when the egg white is ready. About 5-7 minutes.(Personally I like the egg yolk half-cooked)
Serve with feta cheese and whole grain bread. Enjoy! :)

I've made something like this with spaghetti. It also also goes good with steamed white rice. Thanks for your recipe, Despina!:p

Thanks guys! :) This is a quick dinner and also a quick lunch suggestion if there's no time for preparations! I also love eggs and there are a lot of variations!
