OK, so with the fall and colder weather creeping in, it's time for soups
I found some really good sweet onions at my grocery store so I decided to make French onion soup. I found a simple, yet delicious, recipe on line.
It goes something like this:
melt a few tablespoons of butter and a little olive oil together. Slice up a few big onions and sautee them until translucent and then add a pinch of sugar and salt to taste. Cook them until they are brownish, and then sprinkle about a tbsp. of flower over them. Add beef stock (about a can or two). Add half a cup of white wine, if desired, and cook until the onions are tender
Serve the soup with a slice of toasted bread and melted swiss cheese on top.
