Seen it both ways so waiting for Despinas final verdict on the spelling. Any way, I got a couple recipes to try making my own. There is a Greek restaurant across from my p/t job and I love to stop after work and get a Greek salad and a side of Gyro meat and hummus. I want to make some for myself though so I am looking for some recipes :).

I am going to make an oven version and then brown it up on the grill for more flavor. I am hoping for some more recipes and ideas :D.

Hey Rick,it's gyros by the way! It's named like this because while the meat is roasting,it turns around itself(γυρίζει) with the help of a mechanism. And the pieces being cut -well most of them-are having the same size. I've never tried this at home though!I have read some recipes and all I know is that a lot of preparation and spices are needed.I can translate one for you if you want.:)

Ok Gyros it is :). I will let you know how my first one comes out. I should get the lamb and spices tomorrow. Then process the meat and cook. I will post pics and taste results.

Our gyros here in Greece is not made of lamb, but pork meat. Lamb gyros is served in Turkey..I read the recipe and I think it will be good! I'll send you later one recipe, tell me what you think!:)

Its nice to learn from the source :). I will be making it up this afternoon. I am going to let it sit in the fridge for a day to let the spices mingle with the meats. I will cook it Wednesday and let you know.

I am looking forward to your recipe Despina :).

Homemade gyros
This recipe is taken from http://www.sintagespareas.gr site. I have never cooked gyros myself so this is not a recipe I tried myself. In this recipe pork meat is necessary.

2 chops pork neck (the fat is necessary)
2 slices bacon
salt and spices as desired (mixture of pepper, cumin, paprika, oregano, allspice, sumac and some cinnamon)
some olive oil
1/2 cup water
an onion
2 pitas

Beat well two steaks or ask the butcher to do it. The bone does not mind a lot. We can if we want to remove it now or even better after baking
Mix all the spices on the steak and add some olive oil. Put the bacon on one over steak and cover with the other steak. We press the steaks with our hands, so the spices and the oil will be well combined. Put a little oil in a pot and place the steaks. (pot is a saucepan that is used for baking- it has a lid too.) Cut the onion into thick slices and place them round the steaks. Pour some more oil , water and add onion and spices again. Close the pot and bake at 200 ° C for one hour.
Then open the lid and remove the steaks. Cut it into small slices. Put it back in the oven and bake for 10 more minutes with the lid open until it's brown.
Serve with pitas , french fries , tomato slices, tzatziki or whatever you like .
Enjoy!
p.s. there are many sauces you can add to your pitas! not only tzatziki! :D

It was delicious :). I will definitely make this again. I sliced it and added some olive oil and browned under the broiler. Served on pita bread.
