Hey guys!
I just made my very first Reuben sandwich :D It was delicious!
For those who don't know the ingredients, here is what you need:

slices of rye bread (light or dark, whichever you like)
slices of Swiss cheese
slices of good deli corned beef
Thousand Island dressing
a little butter
good sauerkraut (not too tart)

lightly butter the bread on one side only. On the other side of the bread, spread the dressing. Layer the slices of cheese and deli beef. Heat up the desired amount of sauerkraut and then put in the middle of the sandwich. Close the sandwich and toast in in a non stick pan until the sides are golden brown.
Yum.
Serve with some kettle cooked chips or good curly fries :D

Mmm, my tummy is now growling! Where's mine, Dee?:D

I just love corned beef on rye bread or rice:p

This sounds delicious Dee! I just made something similar last week and you have me hyped up to make them again now :giggle:

It's even better when you make the corned beef at home yourself! ;)
Corned beef is of the easiest things in the world to cook.
How do you make your own corned beef, if you don't mind my asking? :)

I put the corned beef in a dutch oven pan (large round pan with lid)
Add water until the water is about 2" above the top of the meat
Add a couple teaspoons of whole allspice
Bring the water to a boil then cover the pan and turn the burner down to simmer.

Cook ~45-50 minutes per pound of meat

When finished cooking, remove the corned beef onto a cutting board and let cool before slicing it against the grain.

Corned beef is great warm or cold

Sometimes I make corned beef and cabbage and sometimes I add potatoes and carrots.

I also like eating just a piece or two of warm corned beef with a bit of dijon mustard as a snack. :D

Well, all the corned beef is gone now and leftover cabbage stored in the freezer for next time. Will be making these soon :D
