Ok first time posting here. Not much of a cook but these are easy and yummy and healthy. You can change the ingredients to suit yourself and also quantities. This is more a "just throw it together" recipe than exact measurements of things. :D

1 medium zucchini (grated)
1 medium carrot (grated)
6 spring onions -shallots/green onions- (sliced thin
handful of button mushrooms (sliced)
good handful grated tasty cheese
3 eggs
1 cup flour
enough milk to make a good consistancy
salt and pepper to taste

Mix together zucchini, carrot, onions,mushrooms, cheese, eggs, salt and pepper in a large bowl.
Sift flour over the top and mix to coat.
Now add milk slowly until you get a nice medium consistancy, You don't want it too thick or too runny.
Spoon into muffin tins. You can just about fill to the top because although they will rise right up, they will shrink down again when they come out of the oven.
Bake in a preheated oven on 180C/350F for about 25 minutes or until set and golden brown.
Makes about 18
