Hello guys.. here's one of my favourite recipes! I love spinach rice.. I cook it here once a week!:) We'll need:

1 kg Spinach leaves (take a few out for your budgies :) )
1 medium onion
1 green onion
2 cups of rice
Parsley
Dill and fennel
Peppermint leaves
1 clove of garlic
4 tablespoons of olive oil
salt
pepper

First, we wash well the spinach, the onions, parsley, Peppermint, garlic, dill and fennel. We cut them into small slices. We put the olive oil inside a big pan and stir in the onion and garlic, and saute until lightly browned. Then, we put the spinach inside and stir it too. The spinach in this stage will lose the 2/3 of its mass. Then we put the rice, dill, fennel, peppermint, parsley, salt and pepper and 6 cups of water. We mix it well. We leave the food in low heat for 20 minutes. After the 20' we cover the pan with a towel and leave it for 10'. :)
We serve it with lemon juice. It will look like this.

Sounds good, I'll have to try it out!
Is it a side dish recipe or is it a full meal? Here, we usually have rice with either some meat or fish.

Hey Aluz! we have spinach rice as a full meal, but you can use it as a side dish recipe as well :) this amount is for 4-5 people. :) try it!

I will try it out, I think it will go well with a couple of fish sticks. :)

If you'll serve fish or something else with this, I advice you to make the half amount. :)

That looks sooooo good and something easy that I can make! I am not a cook and no one usually wants anything I might try to make. lol

That sounds even better, yogurt cuts down on the dryness, right?
Hey Dee, dietary iron which is found in spinach leaves can be better absorved by our organism when a spinach food is combined with Vitamin C. Lemon juice is ideal. But this food is delicious with greek jogurt too! :)

Healthy ingredients and will try your spinach rice recipe after getting dill and fennel and peppermint leaves as found these 2 ingredients out of stock. Do share more recipes of rice please.
