Ingredients: 2 cups of flour, 1/2 cup of white sugar, 1 tblspn of baking powder, 1/2 tsp of salt, 3/4 cup of milk, 1/3 cup of olive or vegetable oil, 1 egg, two tblspns of melted butter (or more as needed), 1/4 cup of white sugar, 1/2 tsp of ground cinnamon.
To make: Preheat oven to 400 degrees F, grease or line twelve muffin cups. In a medium bowl, combine flour, 1/2 cup of white sugar, baking powder, and salt, mix well. In a small bowl, combine milk, oil, and egg, blend well. Add the wet mixture to the dry, stirring well. Batter will be lumpy. Bake for 20-25 minutes, or until a toothpick inserted in centre comes out clean. Cool before removing from pan. Dip in melted butter then in mixture of 1/4 cup of sugar and cinnamon.
