Hello guys! this recipe is one of the most controversial recipes here, as greeks have each his/her own recipe to make a tomato sauce! which is absolutely easy and tasty! and it can have many-many variations, and I'll tell you in which stage you can have some changes.
we'll need:
1 kg fresh tomatoes
2 medium onions
1-2 cloves of garlic
4-5 tbs olive oil
mint
basil
parsley
oregano
a pinch of sugar
1 cup of water
salt
pepper

Start by washing well the tomatoes, onions, garlic, mint and parsley. Seed your tomatoes -peeling is optional- and them chop them in tiny pieces. If it's easier for you, trim all your tomatoes in a large bowl. When that is done, chop the onion, garlic, basil, parsley and mint in very small pieces. Put in heat a large pan, fill with the olive oil and stir in the onion and garlic. Saute them until they are lightly brown.
---in this stage you can add chopped peppers or chopped mushrooms (adding extra half cup of wine), chopped eggplant or carrot or any other vegetable matches your interest :) ---
then we put inside the tomato and stir it. We leave the sauce in medium heat until the liquids are less. Then we put the parsley and mint,basil, sugar, salt, pepper, oregano and the water. We leave it for a second time in medium heat until there are less liquids. I think 10 minutes more or less. This amount is for 5-6 people. You can make this recipe and put it in little bowls, and then to the freezer. This is a good way to have tomato sauce in no time! It will look like this:

Ill try it this weekend. I think I may sub a 1/2 cup of Cabernet Sauvignon for 1/2 cup of the water? or maybe a full cup replacement? Let you know how it comes out. Red sauce is one of my favorites :)
Hey! you can use a little wine instead of water. But I use wine only if I put mushrooms in my sauce!

That looks deliciousssss!!! How about sending some over here?? :p Okay, that might not be realistic. I'd have to make it myself. :rolleyes:
I can send you a dish there, but I am not sure if it comes up healthy to eat! :p haha if you make it, let me know! :)

I always cook the mushrooms in olive oil, butter, salt, pepper and red wine before I add them to the sauce also :).

Too bad we didn't live closer and we could cook for each other :).
One day I saw a french cooking show and the cook said that mushrooms "need" always white wine and garlic. They are like sponges. I do that since and mushrooms are tastier than ever. Yes, we could! come to Greece! :D :D You'll find so many inspirations here! ;)

That looks delicious! I make my sauce pretty much the same way, except I use canned tomatoes. Being married to a greek/Cypriot who doesn't like pasta!!!! :S I don't make it that often as I would like. If it was up to my daughter and myself, I would be eating pasta 3 times a week :) Thanks for sharing. I love trying new recipes :)

Hi Renee! your husband is greek? and he doesn't like pasta? Only my mum doesn't like pasta! all the others love it! try different recipes for all family members! there are a LOT of pasta recipes!
