I'm not sure, but they look delicious.. How about the European/Greek version of begniets?
That means they are cake like... light and fluffy... little squares, usually deep fried but some are baked. Am I close??

Some of you are close :p I think I'll tell you now!
They are soft cookies, filled with hazelnuts! We make them every Christmas and then sprinkle them with caster sugar! Their name is "κουραμπιέδες" kourabiedes and they look like little snowballs!

Making them every year is a tradition here :) They are delicious, really soft butter cookies! People here give them as a treat to guests!

Kourabiedes

Ingredients:

1 and a half cups unsalted butter
half a cup olive oil
half a cup icing sugar
half a tsp baking powder
1 tbsp cognac
5-6 cups all purposes flour
vanilla extract
3/4 of a cup chopped hazelnuts

a lot of icing sugar for powdering


Melt the butter and leave it until it reaches room temperature.
In the meanwhile, sift vanilla extract, baking powder and flour in a bowl. It is important, because it will help the cookies to be soft.
In a food processor, beat the butter,olive oil and sifted icing sugar together for 10 minutes. Then pour inside the cognac. Turn the mixer down to low and add flour a little bit at a time until completely incorporated. If the dough is too sticky with 5 cups of flour, add another ½ cup of flour. In the end, add the hazelnuts. If it is ready, turn the mixer off. The dough is a little thick.
I tend to shape them like bites, but you can give them any shape you like. Place on a baking sheet lined with parchment paper and bake at 180 C for 15-20 minutes until cooked through and they are golden.
When they are hot, remove them from the baking sheet very carefully, place them in a big plate and powder them with icing sugar instantly. The sugar "sticks" on the cookies when they are hot. I usually fill the plate with cookies, powder them and then continue with the rest of them on top, powdering again.

They look delicious!! I've had them many times but never made them. Greek pastries and cookies usually are so much work!! These don't sound too bad though, just need to get a few new baking tools. My husband would be very happy and surprised! Thanks for sharing the recipe.:)
