What veggies should my budgies eat?

a few days ago I saw my budgies eat their poop. So then I researched what it meant and it said they do not have vitamins and minerals in their diet. So then I researched what foods give them vitamins and minerals and there were many but one the list was carrots. But I already give them carrots. So my first question is any other reasons why my budgies ate their poop?

So and another thing that a saw was cauliflower and broccoli I have those veggies at home, great! So a question is are these veggies safe and healthy for my budgies? Should they be eaten raw or cooked by budgies? How should they be served like cut up small or some other way? And any other recommendations for safe and healthy snacks for them?
